PITA BAKERY: It's a PIT(A)y if you don't visit this BAKERY!
That day, I happened to be at Haji Lane shopping for some clothes and decided to drop by Pita Bakery, after receiving many recommendations from the IG community to try out their freshly-baked pita breads and hummus.
"The two-month-old bakery makes fresh pita bread from scratch, which it supplies to neighbouring Mediterranean restaurants as well as cafes and hotels. Customers keen to purchase pita bread in small quantities can buy a packet of 10 for $10." (Taken from http://www.herworldplus.com/)

THE PLACE
The shop is along Haji Lane, just beside Stateland Cafe.
It has a white signboard with red block letters, which makes it easy to spot from afar. As you walk pass the short, you can smell the fragrant aroma of freshly baked pita breads wafting out from the open doors of the bakery. It will definitely be a struggle for anyone (especially bread-lovers like me) to walk past without buying anything from here.
The shop's interior is simple and practical. Their pitas are displayed nicely across the counter and a refrigerator filled with an assortment of drinks, with the kitchen taking up more than 3/4 of the whole shop-space. There are only two small tables located outside the shop, evident that the shop is meant to be more of a takeaway counter than a dine-in eatery.

Their menu is relatively simple, selling only pitas (1pc/5pcs/10pcs) and hummus (250g/500g/1kg). On the day I visited, they were having a promotion: 3 plain pitas + 3 50g pots of hummus @ $10 or 3 assorted pitas + 3 plain pitas @ $11!

Seeing that we were indecisive and unsure of whether we should buy some home to eat or not (we happened to have bought pita bread and hummus from Cold Storage the night before), the confident and friendly store owner generously took out a fresh hot garlic pita from a warmer and a small tub of hummus to let us sample these goods he took so much pride in. "Come, taste this. You will never want to eat store-bought hummus and pita bread ever again."
Doubtingly, I picked up the fresh hot pita, tore of a small piece and dipped it in the cold thick creamy hummus, before stuffing it into my mouth. Indeed, that first bite was breath-taking. I had never tasted such warm fresh-tasting fluffy pita bread in my entire life. Coupled together with the fragrance from the olive oil, the pungent robust flavour from the garlic and the thick smooth tartness of the hummus, I WAS SOLD. From the first bite, I vowed never ever to buy store-bought pita or hummus ever again. A smile stretched across my face as I hastily went back for more. "See, I told you," he cheekily said, his face brimming with pride.
And that was how I was lured into the temptation of buying these piping hot and soft pitas. I chose one zaatar herb pita, one plain pita and one wholemeal pita since we had already tried the garlic pita (which the store owner kindly gave to us, maybe due to the fact that I had already finished more than half of the pita bread single-handedly and double - wait, no - triple-dipped it into the pot of hummus. OOPS. #sorrynotsorry).

That night, I went home and immediately cooked up a storm in the kitchen (well, not exactly). This plate features Pita Bakery's plain, wholemeal and zaatar herb pita, served with their homemade hummus topped with olive oil, chickpeas and paprika and my homemade chickpea black bean salsa. As I slathered hummus all over the insides of the pitas and stuffed them to the brim with the wonderfully delicious salsa, I thought to myself: I could eat this ALL DAY.
Verdict? Amongst the three, I liked the plain pita best as it was the softest and went really well with the hummus and salsa. The wholemeal pita was nice too, but definitely not as soft and chewy as the plain pita. The zaatar herb pita was unique, but sadly was more of a pita pizza than a pita pocket (as it did not have a hole) and hence, could not go so well with the hummus and salsa. However, overall, I would say my favourite would be the garlic pita we sampled at the bakery itself! It could be because we ate the pita fresh on the spot all warm and fresh, or maybe because I naturally have a soft spot for garlic, haha. But I would have to say that in general, all their pita breads are supremely delicious.
Since the store owner told us that his pita breads contained no eggs and hence could be kept in the freezer for up to a month, I decided to freeze some of my stash to keep for future lunches.
On another occasion, I made this Mediterranean Pita Pocket made up of Pita Bakery's wholemeal pita pocket stuffed with homemade hummus, baby spinach chickpeas, chopped cucumbers, salsa, yellow mustard and italian herbs.
However, I heated up the wholemeal pita in the microwave for about 30 second, which resulted in it being too hard! What a pit(a)y...
But overall, this combination of flavours tasted so delightful that I decided to make another one to bring to school for lunch the next day...
Same same, but different. Plain pita used instead of wholemeal pita. Pita defrosted at room temperature for an hour instead of microwaved. Extra cherry tomatoes added. Packed to school instead of eating at home. Turns out... THIS WAS AMAZING. As I contently chomped on this work of art, inside my mind, I was already planning my next visit to the Pita Bakery.

Eggplant Hummus ($15/300g)
UPDATE on 08/11/15:
Eggplant Hummus ($15/300g)
Went back to Pita Bakery recently to buy their hummus because it was THAT GOOD. I went in with the intention to get hummus and the determination not to get any pitas as I had already stocked up on bread the day before (and have more in the freezer haha).
However, when I entered the shop, the friendly (as usual) owner greeted us enthusiastically and recommended his new "eggplant hummus" (he called it some name in another language I can't recall) which he only made 4 x 300g boxes of. Since it was the exact amount, he couldn't let us sample them. However, he guaranteed that he only used eggplants, tahini and herbs inside it so if I liked his hummus, I would definitely like the eggplant hummus.
And boy, he sure was right. This eggplant hummus tasted almost exactly the same as the hummus (thanks to the tahini) except with more chunks from the unblemished eggplant. It also wasn't as thick as the chickpea hummus. But man. I finished half a box in a night with the pita bread I had in my freezer.
Though it may be a bit pricey at $15 per 300g (the guy emphasised "ONLY $15"), but it is definitely worth it. If you try the hummus or eggplant hummus here, you'll never go back to the store-bought stuff, trust me. VERY highly recommended.
LAST WORDS
Recommend, recommend, recommend. Definitely a must-go for all bread lovers. For sandwiches, I would definitely recommend the plain pitas and for the specials, I would recommend the garlic pitas (if you're a fan of garlic). And be sure to try out their hummus, okay? YOU HAVE TO.
